Sauce Boss Gazette

HOT 'LANTA, SOUTH FLORIDA, BACK TO TALLAHASSEE FOR THE 4TH ANNUAL PLANET GUMBO BENEFIT CONCERT, THEN TO ANDERSON, INDIANA AND CHICAGO. Anderson is the home town of Big Jim Jenness- our talented drummer/singer/road manager--so look out for old home week in Indiana. Y'all come on down, ya hear!

THE FIFTEEN STEPS TO CULINARY NIRVANA AND/OR LIQUID SUMMER MARINARA SEAFOOD
This is a really easy recipe, guaranteed to please. Remember, do not overcook the seafood,

THE FIFTEEN STEPS TO BLISS
1 or two heads of garlic
1 pack angel hair pasta
8 or 10 fresh shrimp
1/2 lb. bay scallops
1/2 pint oysters
1 lb. grouper or snapper cut in pieces
1 lobster tail cut up
A few clams or mussels or both
1 bunch fresh oregano
1 onion diced
Liquid summer Hot Sauce to taste
1 qt. high-grade spaghetti sauce
Grated Parmesan
6 gallons olive oil (or less)
1 baguette
1 bottle of red

(suggested salad- tomato, onion, mozzarella, lots of fresh oregano, marinaded in balsamic and oil

OK. Here's what ya do.
1. Make the salad, set it aside to marinade. do not refrigerate.
2. Steam the seafood until almost done. set aside. save the broth
3. Dice onion, garlic, and oregano
4. Open the bottle of wine and let it breath. ( you might have a little taste just to make sure it's all right)
5. Saute onion and half of the garlic in olive oil
6. Add oregano and spaghetti sauce, cooking on low
7. Take the broth from the steamed seafood, bring to boil. Add water if necessary.
8. Cook the pasta in the broth
9. While the pasta is cooking, add the seafood to the spaghetti sauce and Liquid Summer to taste
10. Saute the rest of the garlic in great gobs of olive oil
12. Cut up the baguette and lay it on top of the saute
13. Arrange the table, load the plates, sprinkle with parm, pour the wine
14. Take three deep breaths
15. BEGIN
OR... you could pour the whole mess over your head and change your name.

My buddy, Russell Hibbard, turned me on to the Oriental Market in West Palm. Russell, incidentally, is a true officianato, and the owner of the Bamboo Room, which is the coolest club in South Florida. Well, Russell says to me, "If you are into Thai, the Oriental Market is da place to go!"
Soooo, I'm off and running in search of strange and wonderful gastro-magical fandangos. I was not disappointed. For twenty-plus years, Julie and Sam have purveyed Asian delicacies, and cooked up a plethora of hot and spicy delights. There's a market stocked with all kind of stuff, with a desk/office, a tiny kitchen, and a few seats just in case you can't wait to get yer squid home.
Julie is the perfect hostess, and the food ROCKS!
