Here's a real find. East and West Indian cuisine made with love and care. The east/west synthesis happened in Jamaica when British servants from India brought curries and spices and mixed it in with local culture. Down in North Miami Beach, there's a little Roti Shop where Christine whips up the real deal. Roti is a flat bread upon which an Indian style stew of chicken, beef, goat, duck, conch, shrimp, or veggies is spooned on and then it is wrapped up like the Mother of all burritos. Also there's Jamaican Patties and phlowrie (fritters), and jerk chicken, fish or veggies. Great prices and beautiful countenance. The sign at Christine's sez it right: "Love all, Serve all, We care what we do".

I WAS TALKIN TO THIS OLD GUY FROM LOUISIANA. You can always tell when they ask you, "Where you from?" that they're bustin yer Florida balls. I mean how can a guy from Florida make gumbo anyway? So this guy from Houma is tasting my gumbo and giving me a thumbs up on it and we got on the subject of Boudin. I said I've tried to make it a couple of times but never got the hang of it. "Oh yeah, Boudin!", he said, seeing that he had my undivided attention, "You know what to do with Boudin? " I quickly assumed the position of culinary genuflection, licking his loosianna cowboy boots in supplication. "Teach me, oh master," I thought. I said, "What?" He said, "Keep trying."
