TED PETERS FAMOUS SMOKED FISH

Ted's been smokin' fish in St. Pete for over 50 years. In 1999, he smoked 110,000 pounds of mackerel, mullet, and salmon in a little smokehouse about the size of your garage. The racks, which hold the fish, are blackened with decades of the smoke from red oak logs. Ted's got hisself a great little take out business, or if you prefer, eat on the open air restaurant next door to the smoke house. German potato salad, homemade Manhattan clam chowder, and smoked fish spread round out the meal. Wash it down with a mug of root beer, or cold draft. Oh yeah.
SALMON A LA SAUCE BOSS I guess that you guys have figured out by now that I'm crazy about salmon. It's good for ya. Here's a new twist. Bake a slab o' salmon at 350 degrees until it's just a hair from being done. Mix :1 cup of steamed spinach, 1/2 cup feta cheese crumbles, 1/2 cup pine nuts, 2 tbs. Brown mustard,1 tbs. honey Put mixture on top of the salmon, and finish it off in the broiler. Makes a great cold salmon and spinach sandwich the next day with onions and tomatoes. A little dab o' Liquid Summer Hot Sauce for daubing... or not... but probably... you'll want some. |
